Tofu Scramble

I had some leftover cubed tofu from the other night that was begging to be used up, so I made my first tofu scramble yesterday for lunch. Forgive the little burnt crunchy onions… I turned my back to do some dishes, oops.  Still delicious.

I sauteed burnt some onions in some olive oil, added the crumbled tofu, and sprinkled everything with the lovely chipotle Mrs. Dash seasoning that Heather sent me (I looooove this stuff!).  I sauteed the tofu for a couple minutes and then topped a microwaved sweet potato with the scramble.

Quick and tasty!

Dinner last night?  Umm… some GF crackers, a blob of hummus, a couple pickle spears, and some tortilla chips topped with jalapenos.  I was tired when I got home from class at 11… you can’t win em all!  😉

Moving on.

Breakfast this morning was of course more of my lovely, dreamy bread.

I can’t get enough of it.

Another crazypants day… gotta run!  What’s the lamest dinner you’ve had recently?

    Lamest? Yesterday. One pickle. One apple with chocolate pb. Two carrot sticks. One monster blob of zucchini hummus to go with said carrot sticks. 2 Dried apricots. Sounds like the meal of a lifetime, huh? 🙂

    As for the burnt onions- still yum- and that tofu scramble with sweet p’s- that just looks awesome.

  7. haha, well while Chris was outta town I’m pretty sure I had chicken pot pie (leftovers) for like 4 or 5 consecutive dinners. To be honest, after #2 I was already pretty tired of it! Other “lame” favorites include your basic PB&J or a bowl of cereal. Although if I’m down to these as my only options, I’ll usually just order take-out (I’m bad, I know!) ; )

  8. Mrs. Dash is one of my favorites too. I personally like the Salt-Free Garlic and Herb. 🙂

    That is my FAVORITE way to eat bread — nut butter lovely spread all over, with banana slices to top it off. 😉

  11. Oooo! I never thought about doing the tofu scramble on top of a sweet potato! What a great idea! I have had plenty of lame meals – anything ordered, take-out or packaged and thrown in the micro or oven is lame nowadays. Back in college or high school that was pretty standard for me. I like appreciating what goes into cooking a great meal now, with fresh ingredients and real food. Laziness or a busy schedule will always come up though so, like you said, you can’t win ’em all!

    My lamest dinner was a PB&J sandwich on Sunday night. I went to a yoga class and then the grocery store and didn’t get home until 9:30 and was starving!

  15. Lazy quick dinner meal for me is a bowl of oatmeal..who sais you can’t have breakfast for dinner?
    Tofu scramble looks good, too bad that tofu gives my stomach major issues.

  20. Mmm, your burnt onions actually look pretty tasty to me! Don’t you just love that Mrs. Dash stuff? I figured since I put it on just about EVERYTHING that I had to share!

    Lamest dinner? Half a container of white bean hummus, blue corn chips, Newman O’s and peanut butter! 😦 Hahaha!

    Lamest dinner of recent eats would probably be that hot dog nacho concoction I made a few weeks ago. It was….odd. 🙂 Edible, but not repeatable.

    I might have to get up and make some bread….just don’t have any “warm” spots to let bread rise right now. Oh and the rolling power outage threat isn’t helping matters.

    I have been searching for some good tofu recipes and your sounds quite yumster 😉 ! I don’t think your late night dinner sounds lame, sometimes those dinners just hit the spot when you are dog tired ! Ok I have been watching the weather.. is it freezing in TX right now?! Crazy!!!
