I had some leftover cubed tofu from the other night that was begging to be used up, so I made my first tofu scramble yesterday for lunch. Forgive the little burnt crunchy onions… I turned my back to do some dishes, oops. Still delicious.
I sauteed burnt some onions in some olive oil, added the crumbled tofu, and sprinkled everything with the lovely chipotle Mrs. Dash seasoning that Heather sent me (I looooove this stuff!). I sauteed the tofu for a couple minutes and then topped a microwaved sweet potato with the scramble.
Quick and tasty!
Dinner last night? Umm… some GF crackers, a blob of hummus, a couple pickle spears, and some tortilla chips topped with jalapenos. I was tired when I got home from class at 11… you can’t win em all! 😉
Moving on.
Breakfast this morning was of course more of my lovely, dreamy bread.
I can’t get enough of it.
Another crazypants day… gotta run! What’s the lamest dinner you’ve had recently?
❤ C
Lamest? Yesterday. One pickle. One apple with chocolate pb. Two carrot sticks. One monster blob of zucchini hummus to go with said carrot sticks. 2 Dried apricots. Sounds like the meal of a lifetime, huh? 🙂
Love it!! 😉
I had instant pudding and dried plums a few nights ago 🙂
Too funny! 😉
My favorite “dave’s not home” dinner is a smoothie and popcorn! hehe 🙂
I am sooo not a dinner person! I usually randomly snack or eat something small!
Totally replied to your comment on my blog too soon. I found the GF bread! I can’t wait to click over to your other post and see it! YUM.
As for the burnt onions- still yum- and that tofu scramble with sweet p’s- that just looks awesome.
Tofu scramble is on my “To Make” list for sure. I think i’m going to do it curry style maybe? who knows! ❤

Curry scramble would be amazeballs!!
And I SAW THEM! I replied to you… you’re a genius!! xo
haha, well while Chris was outta town I’m pretty sure I had chicken pot pie (leftovers) for like 4 or 5 consecutive dinners. To be honest, after #2 I was already pretty tired of it! Other “lame” favorites include your basic PB&J or a bowl of cereal. Although if I’m down to these as my only options, I’ll usually just order take-out (I’m bad, I know!) ; )
Mrs. Dash is one of my favorites too. I personally like the Salt-Free Garlic and Herb. 🙂
That is my FAVORITE way to eat bread — nut butter lovely spread all over, with banana slices to top it off. 😉
I had a lean cuisine last night- pretty lame!
That’s not a lame dinner at all! Just an easy one 🙂
Lame is that one day when I had white rice, steamed broccoli… and no seasoning! At least yours tasted good.

Oooo! I never thought about doing the tofu scramble on top of a sweet potato! What a great idea! I have had plenty of lame meals – anything ordered, take-out or packaged and thrown in the micro or oven is lame nowadays. Back in college or high school that was pretty standard for me. I like appreciating what goes into cooking a great meal now, with fresh ingredients and real food. Laziness or a busy schedule will always come up though so, like you said, you can’t win ’em all!
My lamest dinner was a PB&J sandwich on Sunday night. I went to a yoga class and then the grocery store and didn’t get home until 9:30 and was starving!
that tofu scramble looks good! i haven’t bought tofu in so long.
lamest dinner-probably tonight: rice chex and almond milk 🙂
ohmygoodness that bread looks amazing. PB and banana toast is by far the bessst combo ever!
Lazy quick dinner meal for me is a bowl of oatmeal..who sais you can’t have breakfast for dinner?
Tofu scramble looks good, too bad that tofu gives my stomach major issues.
Wow what a very healthy lunch you had. I love the idea of scrambled tofu.
I gots to have love for the burnt onions. No matter how I try to screw them up, I still can never get enough onions 🙂
your scramble looks divine!! im about to go have lunch and that is calling my name!
Prob last night-salad and green beans, lol. Love the pics!
Mmm, your burnt onions actually look pretty tasty to me! Don’t you just love that Mrs. Dash stuff? I figured since I put it on just about EVERYTHING that I had to share!
Lamest dinner? Half a container of white bean hummus, blue corn chips, Newman O’s and peanut butter! 😦 Hahaha!
PS, I WANT yo bread!!
I do lots of lame dinners…yours was not lame at all! I hope you have a great day today!
My lamest dinner lately was definitely pretzels and raisins. It was good—and I was full—but I totally felt like I missed out on the satisfaction part of dinner!
Ummmm… I eat egg whites with PB and J pretty much every single day for my “dinner” meal ahahaha LAME
That sounds pretty good to me! 😉
A nature valley peanut butter bar and then an apple pie larabar. Haha!
P.S. I looove burnt onions!
I love scrambles – they’re the perfect way to use up leftovers. I made a veggie and cheese one topped with mustard yesterday. Random, yet delish! 🙂
Okay, I read your question wrong. My lamest dinner recently was a slice of pizza and an ice cream sandwich with PB on top.
Lamest dinner of recent eats would probably be that hot dog nacho concoction I made a few weeks ago. It was….odd. 🙂 Edible, but not repeatable.
I might have to get up and make some bread….just don’t have any “warm” spots to let bread rise right now. Oh and the rolling power outage threat isn’t helping matters.
Oh I know… I’m sitting here typing and just anxious about the power dropping any minute! Yikes!
Bowl of cereal or tortilla pizza with just sauce and cheese is usually my lamest! 🙂
I have been searching for some good tofu recipes and your sounds quite yumster 😉 ! I don’t think your late night dinner sounds lame, sometimes those dinners just hit the spot when you are dog tired ! Ok I have been watching the weather.. is it freezing in TX right now?! Crazy!!!
Girl, it is INSANELY cold here for us! People’s pipes are freezing and they are doing rolling blackouts to conserve power… nutty I tell ya!
I lovee ‘fu scramble!
