Two Sweet Breakfasts

That last two mornings my breakfasts have had some desserty and delicious components to them.

You know what’s awesome about being an adult?  If I want ice cream on my oat bran, I can have it.

I cooked 1/2 cup of oat bran in 1 cup of unsweetened vanilla almond milk, stirred in a spoonful of sunflower seed butter, and topped it with some vanilla bean coconut milk ice cream.  I will forever thank HEAB for this combo.  The warm oat bran and the cold ice cream are just dreamy together.

This morning’s breakfast had some of this precious gold on it.

A very thoughtful and very delicious gift from my yoga instructor that she picked up on her way back into town after Christmas!

One piece of toast with crunchy Barney Butter, one with creamy, and both topped with a small amount of the pecan honey butter.  Sweet perfection.

And speaking of my yoga instructor, for my local readers, next Tuesday is her new studio’s grand opening!

A meet and greet at the studio with delicious vegetarian Indian food appetizers and the chance to win a 6 month unlimited pass!  I’d love to see you there  🙂

  2. I definitely eat ice cream for breakfast—-coconut ice cream, vanilla flavored! I haven’t put it with oat bran though…so that’s next 🙂

  5. Never had ice cream for breakfast, but I have had cake, cookies, and pie! But now, after reading, “The warm oat bran and the cold ice cream are just dreamy together, ” I HAVE to try it!

    I had frozen yogurt for breakfast this morning, if that counts… Well, not really for breakfast, but when I got out of bed at 6 in the morning and was wandering around the kitchen half awake 🙂

    How genius of you to put ice cream on your oats! The only time I eat ice cream for breakfast is when we go to this place in town called Wild Eggs. They have a Banana Foster’s Waffle that is AMAZING. (Big belgian waffle topped with banana foster’s syrup and a big ol’ scoop of vanilla bean ice cream!) To. Die. For.

    What a breakfast I love those, specially the ice cream on oats, I havent tried them but will do first thing in the morning, I still have some french vanilla left on my freezer.
