Lemony Miso Tilapia and a New Kale Chip

Want a simple and delicious way to prepare tilapia?  Get some miso paste.  I use this one.

Looks like pooooop.

Get some on your fingers like an inmate in the crazy ward (What?  Too gross?  I never claimed to be appropriate.) and rub it into the fish.  I’m sure there are other ways to apply this that are less messy, but I’m a huge fan of using the our god-given tools in this instance because it really gets a good coating all nice and rubbed in.  Place the rubbed down tilapia in a lightly sprayed baking dish and sprinkle generously with True Lemon.

Bake at 400° for 30 minutes, and in the meantime throw a cup of quinoa, 2 cups water, one veggie bullion cube, and some torn up kale into the rice cooker.  Half an hour later, dinner is served.

Doesn’t get much easier than that.  I think next time I’ll wait until the quinoa is almost done to add the kale so it’s less cooked down, but all in all a delicious success.

There is one store in the whole area with good looking kale right now, so I stocked up the other day.  I made a new batch of kale chips using my standard recipe but with one amazing addition… smoked paprika.

Cheezy Smoky Kale Chips

  • One bunch kale
  • 1 cup plain hummus
  • 1/3 cup nutritional yeast (I like em reaaally cheezy)
  • 1/2 tsp True Lemon
  • 1 tsp salt (although I think I’m going to start using 1/2 tsp)
  • and 1/2 tsp (mine was pretty heaping) smoked paprika

Mix the hummus, nutritional yeast, True Lemon, salt, and smoked paprika together with some hot water to thin it out just a bit, but not too saucy.

I tear the kale off the stem into good chip size pieces, run it through the salad spinner, put it in a bowl, and then dump the liquid mixture over the top, using my hands (again!) to evenly distribute the mixture on all the kale pieces.

Into the dehydrator overnight at 120°.  I don’t have any after pictures.  I ate them all, and they were ridiculously delicious.

Do you keep fresh lemons/limes around at all times, or do you use bottled lemon juice/True Lemon?

  2. I try to keep fresh lemons all the time…and sometimes I am successful at that.
    The miso is a great idea! I like miso soup and have used it in a few recipes, but with all that flavor, it sounds great with mild-y tilapia 🙂

  5. Looks & sounds delicious! I’m also a fan of using your fingers & just getting down & dirty in the kitchen! Lots of meats taste better if actually rubbed! Maybe it can be done with a spoon or something, but my fingers work equally well (if not, then better) & it’s one less spoon to wash!

    I need to get some miso paste pronto! I’ve definitely always got fresh lemons and limes on hand (you never know when rounds of tequila shots will be passed around, so it’s good to be prepared, hehe)

  8. Hahaha it’s funny that you said it looks like poop because that’s EXACTLY What my friend said about the protein bars I just posted about. Hahaha. Sometimes food doesn’t look so good, but it still tastes awesome!

    I used to buy the bottled lemon juices but I could never get a good enough hole poked in it so it was always so frustrating. I just make sure that I plan out my meals so that I can buy the fresh lemons when I need them now. I think it smells nicer than the bottled juice too 🙂

    Wow. I feel like a total copy cat. I didn’t read this first…perhaps I should have? I’m in the process of baking a very similar kale chip for tomorrow’s blog because you sort of challenged me to use kale and nutritional yeast (even though you didn’t say to put them together per se)…..and it looks VERY similar. Oops. What can I say, I love smoked paprika? Doh.

  24. I do both with lemons and limes. It really just depends on what I feel like at the time. I need a dehydrator so badly now! I did kale chips in the oven before and loved them, but I think the dehydrator would be better for the “cheesy” ones.

    Wow I missed reading the blog posts of my blog friends, I just came from a two week holiday in Gold Coast and never did dare to go online. Now I am back to read those wonderful posts again.

    I love tilapia, I remember we have a lot of those in the Philippines but we dont have that in NZ. Thats why when we went to US last year thats the first fish I had ordered.
