Mushrooms and Onions

Regarding my spam issues, apparently if I use my raspberry.muppet email address, I don’t get sent to spam, but I do with my purplebirdchristin email address.  Grrr.  I emailed Akismet… here’s to hoping they can fix it quick!

I happened across Susan‘s (from OliePants) recipe for tempeh joes yesterday around lunch time, knowing I had some tempeh to make.  I went straight downstairs and got my tempeh crumbled and marinating in some of my dad’s delicious BBQ sauce.

I sliced some mushrooms and chopped some onions, which I sauteed until tender.

I added the tempeh/BBQ sauce mix, let it all get warm, and served it over a bowl of brussels sprouts.

This was delicious, but left my tummy feeling angry.  I went and checked my tempeh, and sure enough it had wheat in it.  I have cut most wheat out of my diet over the last week and a 1/2 or so doing an experiment (I’ve still been eating a few graham crackers here and there, and for some reason that doesn’t seem to really bother me, so I don’t get it), and I’m curious if that is what made my tummy funky.  I have one more block of tempeh left, so I might wait a few days and prepare it differently and see if it still makes my stomach angry.

Anywho. (Or is it anyhoo?)

Dinner was another blogger inspiration, this time from Jessica (Dairy Free Betty) and her amazing mushroom & kale quinoa risotto.  And another lovely opportunity to eat more mushrooms and onions!

My only substitutions were veggie broth for the chicken broth, dill for the savory (which was totally awesome, might I add), and I threw in some spinach too because I didn’t have much kale left.

Also, I think I had the heat up a tad bit too high during the broth process, because some of my quinoa still had uncooked centers, but I was so hungry by the time all the broth was “sucked up” that I didn’t even care.

So good.  I could eat mushrooms every day.  I love the meaty texture!

    Maybe tempeh is just a little difficult to digest? I don’t have any wheat issues but I just had some tempeh and I’ve got a bit of heartburn going on. Hmmm. I wish I had some BBQ sauce to try that out! And I loooove mushrooms. Especially when sauteed in some olive oil & herbs.

    I’ve never tried tempeh before, but I had regular (ground turkey) sloppy joes for dinner tonight. I love those things! ❤

    I’ve never had tempeh – I’m actually a little scared to try it! 🙂

    I am definitely not a mushroom fan – I pretty much only don’t like the “chinese food veggies”, as I call them – mushrooms, water chestnuts, baby corn. 🙂

    Love them! and as a vegetarian I always feel a bit weird gushing about how “meaty” they are (I’ve been vegetarian since toddler, so its not like I crave a “meaty” taste)… I like em raw, sauteed, stuffed, stewed…

    I freakin’ love mushrooms. My husband merely tolerates them. So, I try to make sure I don’t overwhelm him….every one in a while though, I just gotta have them. Mmmm….stuffed bellas…..oh sorry!

  13. i do love mushrooms. although i have to be in the mood for them….they have such a distinct flavor and texture that if i’m not in the right mood, i actually find them to be gross.
    sorry about the tummy troubles. why was there wheat in the tempeh? was it a flavored kind?

    That is so strange — all of my posts yesterday were going to Spam too — I don’t get it?!??!

    I’m not a huge mushroom fan — although mixed into dishes they are ok most of the time.

    I love the tempeh joes — they look great! And I have no idea about anywho/anyhoo — I’ve wondered that myself!

  20. I LOVE mushrooms! About 90% of my dinners start out with sauteed onions, garlic, and ‘shrooms! Hope you get the spam thing fixed soon! I remember how much that sucked when it happened to me. I saved the email address of the Akismet person that helped if you need it.
