Whole Wheat Pumpkin Biscuits

Rambo loves his bee.

Ever since I read Gina‘s post the other day about sweet potato biscuits, I knew I had to make them, or something like them.  Last night I used her recipe but used whole wheat flour (therefore omitting the need for xanthan gum), canned pumpkin, and Earth Balance.

Man.

Soooooo good.  Dense and hearty and filling and perfect.

The funny shaped one made out of the last of the dough.  I don’t discriminate.  I ate him right up.

Served alongside some roasted asparagus (olive oil, salt, pepper, 400° for 35 minutes), wilted spinach, and sauteed chicken (olive oil, Bragg’s Liquid Aminos, Sriracha, and garlic powder).

    Mmmm! Those pumpkin biscuits look amazing! The asparagus too! By the way, for Tday I’m making that peanut butter pumpkin cake/pie you posted a few days ago.     • I am staying in Austin. My boyfriend might not make it back from Oklahoma in time to join me though! 😦 Oh well, he’ll get to be with his family, and we can just have Christmas together instead. I hope you have a wonderful Thanksgiving as well!
