Having made tortillas last night, there was only one viable option for breakfast this morning… breakfast tacos!
Filled with an egg, sweet potato, and spinach scramble and served alongside a clementine and some delicious coffee.
This afternoon I went to a friend’s house and did massage routine homework (best homework ever!), and when I came back I was famished and craving some veggie action.
I roasted up these guys (olive oil for the brussels, coconut oil for the butternut squash, sprinkled with salt and pepper, into the oven at 350° for 20 minutes and 400° for 20 minutes) and sauteed some chicken.
I love the super crunchy brussels bits the best! Plated up with my last tortilla.
I am now pleasantly stuffed and off to finish my business assignment homework. Have a relaxing Sunday evening!
