Skettiskwash!

So I keep putting blogging off.  Let’s get this party started!

Tonight’s dinner rocked my face off.  I started by making some turkey meatballs.

  • 1.25 lbs ground turkey
  • half a can butternut squash
  • one small gala apple cut into itty bitty chunks
  • salt and pepper to taste

Squish the above together in a bowl with your hands.  Roll little balls in your hands (TWSS!), placed in a lightly greased baking dish, and bake at 375° for about 35 minutes.

I also cut two small spaghetti squash in half, brushed with olive oil, sprinkled with salt and pepper, and roasted those babies for about 20 minutes in the 375° oven and an additional 45 minutes with the heat kicked up to 400°.

Once the skettiskwash came out of the oven and was cooling off, I whipped up a new sauce on the stove.

  • half a can butternut squash
  • half a small can of tomato paste
  • almond milk to thin (maybe 1/2 cup, I didn’t measure)
  • 1 tbsp powdered goat milk
  • 1/4 cup goat cheese crumbles
  • 2 tbsp nutritional yeast
  • couple leaves dried basil, crunched up into bits
  • salt, pepper, and garlic powder to taste

All whisked together until uniform and warm.

All plated up and super delicious.

Even Alex liked it, which is an amazing feat!  And I have plenty of leftovers for tomorrow… super score!
